TASTING NOTE:
An intense and concentrated red with notes of ripe blue fruit and violets, as well as dark chocolate and spices. Full-bodied with incredible depth and layers of plush tannins that bring waves of warmth and a velvety sensation on the palate. Deep and long. Firm at the end. Better after 2024, but already attractive with pretty austerity at the end.
WINEMAKER'S NOTE:
Our most rare and beloved Cabernet Sauvignon leads with dark fruit aromas layered with integrated floral notes. This wine is fresh and supple on the palate with flavors of blueberry, blackberry, and red currant supported by dusty, fine-grained tannins and hints of cedar and sage. The elegant structure and balance culminate in an uplifting, lengthy finish.
This robust Cabernet Sauvignon pairs exceptionally well with highly marbled steak, like Winery Chef Chris’ Tomahawk Ribeye. This cut of meat is both dramatic and well-balanced and enhances the peppery berry notes of this wine, while the fat elongates its finish. Throw in the roasted potatoes and spinach to round out this dish, and this pairing will take your palate over the moon!
